Super Easy Pavlova
Here she is in all her glory! A super easy Pavlova. With the perfect amount of soft meringue with crunchy meringue, you will never want to buy a pavlova again after trying this. Top with lashings of cream and your fav fruits! Delicious!
Ingredients
- 4 eggs - white only
- 3 cups castor sugar
- 2 teaspoons vanilla
- 2 teaspoons corn flour
- 2 teaspoons white vinegar
- 6 tablespoons boiling water
- To top
- 1000ml whipped cream
- Fruit of choice
Instructions
- Preheat oven to 160 degrees
- Add all ingredients (except boiling water) and start whipping on low. Add in boiling water while whipping and then mix on high for 10 minutes until light and fluffy
- Place baking paper down on tray and spread pavlova on top. I like to try place pavlova mixture quite high so doesn't end up too wide as you spread. I also like to create vertical ridges around the edge by lifting the spatula upwards on the sides as you move around. For reference with this mixture I make a round about 27cm wide. (if you spread too wide it will end up thinner and affect end result)
- Bake for 45 -55 mins until slightly golden.
- You can bake longer if you prefer more crunchy meringue or less if you prefer more fluffy soft meringue. Same goes for size and height of pavlova. The higher the pavlova the more fluffy soft meringue and thinner, more crunch.
- Let it cool completely before topping with cream and fruit. Best served immediately once topped.
Notes
This is a large Pavlova and should serve 10+ people
For a smaller pavlova - halve the recipe and cook for 30-35 mins
