Looking for the perfect Christmas Day cocktail or a delicious alternative to soft drink? This one is an absolute winner and so easy to make. Just 4 ingredients (plus alcohol of choice if using)


Ingredients

  • 500g watermelon
  • 1 whole lemon - peel and remove pips
  • 40-60g caster sugar
  • 1/2 litre of soda water or more
  • Gin or alcohol of choice

Instructions

Watermelon Fizz
  1. Place watermelon and lemon in blender or Thermomix and blend speed 8/10 seconds
  2. Strain in a fine sieve and discard pulp
  3. Add juice back into Thermomix with sugar and blend speed 8/8 seconds
  4. Pour into a jug and top slowly with soda water to taste
  5. Serve with slice of watermelon
Gin Fizz Cocktail
  1. Do first 2 steps as above but don't add soda.
  2. Put 2 shots of juice and one shot of gin into shaker with ice (double for 2 portions) and shake.
  3. Crush some ice in your Thermomix on speed 10/ 5 seconds and add some to glass.
  4. Pour without ice into cocktail glass.
  5. Top with a little soda water.
  6. Garnish with watermelon
  7. Enjoy!
