Chocolate Brookie

If a brownie and a cookie had a baby, it would make a Brookie. The perfect crispy outside and soft fudgy inside. It’s rich, decadent, dangerously simple and only takes 10 minutes to cook

Half brownie, Half cookie = Brookie. The perfect crispy outside and soft fudgy inside. It’s rich, decadent, dangerously simple and only takes 10 minutes to cook. You won’t be able to stop at one, don’t say I didn’t warn you

Ingredients

  • 230g 70% dark choc
  • 30g butter
  • 1/2 cup caster sugar (125g)
  • 4 Tbs Self raising flour (55g)
  • 2 eggs
  • 1 teaspoon vanilla
  • 50-100g dark choc chips

Instructions

  1. Preheat oven to 150-160 (pending your oven runs hot or normal)
  2. Get your baking tray with some grease proof paper on top ready as you want to be able to scoop cookies as soon as batter is mixed
  3. Place butter and dark chocolate in a heat proof bowl and place in microwave for 30 seconds. Stir and repeat 2 to 3 times until chocolate is just melted.
  4. In another bowl, place all other ingredients (except choc chips) and whisk together with a hand mixer or hand whisk until light and fluffy.
  5. Once chocolate mixture is cool, add to egg mixture and stir gently to combine.
  6. Immediately scoop using an ice cream scoop or large spoon to scoop rounds on to baking tray lined with baking paper. Makes 10 cookies. Sprinkle with chocolate chips.
  7. Place into pre heated oven to cook for 10 minutes.
  8. Let cookies set for a few minutes to cool slightly as will be very soft (except the one you are immediately going to pick up to eat straight from the oven 😉)
  9. Enjoy warm.

Notes

If you make smaller cookies, reduce cooking time by 2 mins

If you have any left the next day, warm for 12 seconds in the microwave before enjoying.
