Creamy Tomato Soup

Simple, easy and delicious. Like a warm hug on a cold day. Serve alongside grilled cheese toastie for a 10/10 easy and delicious meal

Ingredients

  • 4 garlic cloves
  • 1 brown onion, cut in half
  • 1 carrot
  • 40g butter
  • 10g olive oil
  • 700g of fresh tomatoes (or a mix of fresh and tinned tomatoes)
  • Handful fresh basil and parsley leaves (use 1 teaspoon dried if you don’t have fresh)
  • 80g tomato paste
  • 1 tsp salt
  • 1 tsp sugar
  • 200g water
  • 1 tablespoon vege or chicken stock paste
  • 100g cream
  • Salt and pepper to taste
  • To serve - grated parmesan or cheddar and dollop sour cream. Serve alongside grilled cheese toastie for a 10/10 meal

Instructions

Thermomix Method
  1. Place garlic, onion and carrot in mixing bowl and chop 4 sec/speed 7
  2. Scrape down sides
  3. Add butter and oil and cook 3 min/120 degrees/speed 1
  4. Add all tomatoes, fresh herbs, tomato paste, salt, sugar chop 5 sec/speed 5
  5. Add water and stock paste and cook 15 min/100 degrees/speed 2
  6. Add cream and blend 20 seconds/speed 6
  7. Serve topped with grated Parmesan, a dollop of sour cream and freshly cracked pepper
Traditional Method (No Thermomix)
  1. Dice onion and garlic, grate carrot fine and add to large deep pan with butter and oil
  2. Sauté off for a few minutes until onions start to cook and soften
  3. Chop tomatos and add to pan with remainder of ingredients except cream
  4. Gently simmer until vegetables are all soft 20-30 mins (You may need to add little more water)
  5. Add cream and use stick blender to purée soup together.
  6. Season with salt and pepper to taste and serve hot topped with grated Parmesan, a dollop of sour cream and freshly cracked pepper

Notes

If you don't have stock paste you can substitute with a stock cube or liquid stock (although don't add water if you use liquid stock) Season accordingly
